Little Pocket Baker by Fritz Gienandt

Description

This RARE 1926 2nd Edition "Little Pocket Baker" by Fritz L. Gienandt. Includes 1,094 Professional Recipes. Unlike common household cookbooks, this book is a rare, highly collectible piece of culinary history written by an industry expert for professionals, making it a treasure trove for anyone seeking to master pre-industrial, "Golden Age" American baking recipes and techniques.

Fritz L. Gienandt was a titan in the industry, and his books are highly sought after by culinary historians and professional pastry chefs for their technical precision. : This specific book is famous for containing over 1,100 "well-tried" recipes. It covers almost every possible niche: Breads, Rolls, Cakes, French Pastries, Cookies, Puff Pastry, Pies, Fillings, Tarts, Ice Creams, Tea Cakes, Meringues, Breakfast Pastries, Custards, Icings, Jellies, Jams, Holiday Items, and even Ornamental Confectionery.

Appreciated for its unique format. It was designed as a "pocket" manual so bakers could keep it with them on the flour-dusted floors of 1920s bakeries. This is why copies in good condition are so rare—most were literally used to death in commercial kitchens.

Published in 1926, this second edition represents the peak of pre-industrial American baking. It’s a "biblical" resource for anyone interested in authentic, early 20th-century recipes before mass-produced ingredients became the norm.

Condition:
The book is hardcover with no dust jacket. The current texture of this book gives the impression that it was in someones back pocket for an extended period of time. The spine is very slightly separated from the front and back covers on the top and bottom of the book. The Bottom of the spine is slightly damaged and missing a tiny piece on the back cover side. The front cover was folded in half at some point from the inside, therefore leaving a slight crease on the outside of the front cover and a cracked paper look on the inside of the front cover. The front cover has the bottom half of a snap button inserted in it. The book must have had some some kind of a binding strap with a top half of a snap button connected to the strap. This strap must have helped keep the book closed. The strap piece is missing. The book is 100% readable. All of the pages are intact and contain no writing or highlighting. The pages contain NO rips or tears. The pages are tightly bound to the spine.
